What To Do When You Have 30 Eggs

One day at the Grassmarket market on Saturday I found a stand that was selling 30 eggs for 3 pounds. I usually get eggs at the supermarket at a dozen for 2.50. So when I saw the sign I told the man running the stand: "One tray please!". So now I'm walking home with 30 eggs super excited thinking that I won the lottery. But then it dawns on me: what in the world am I going to do with 30 eggs???? Of course I eat eggs, but I am not Sam from Green Eggs and Ham either. I decided to split them with my flatmate Zoe, which ended up being a sweet deal and it became a habit to buy the 30 eggs from the sweet man at the market. However, there have been times where I have 30 eggs for myself and I get bored of making the same thing over and over again. So why not get creative with this abundance of eggs! They're one of the most versatile ingredients out there and they are super yummy. You can eat them on their own or use them to top a dish; you use them for cookies, cakes, and sauces, and even for face and hair treatments. So pretty much much everything! 

Given that I have 30 eggs I am going to challenge myself to come up with 30 different ways to use eggs! Some recipes might use eggs as an ingredient or as the main component. This project will take time, so I'll be uploading the recipes a bit at a time. If you have any dishes with eggs that you love and want me to try out let me know!
