Recipes: Gnocchi With Gorgonzola Sauce

I've never been a huge fan of gnocchi, but I also hadn't eaten that much in my life. One day, when I was still living in Edinburgh, a few friends and I went to dinner at Gordon's Trattoria. My friend ordered some gnocchi with spinach and Gorgonzola sauce. She gave me a taste and it was delicious. Everything we had that night was delicious.  I highly recommend Gordon's Trattoria if you're ever in Edinburgh (I'll add a link). They offer traditional Italian cuisine with fresh ingredients at a super central location, right on the Royal Mile! 

Ever since then I've been wanting to re-create the recipe, but I'd never gotten the chance. Just a few days ago I was on the bus on my way home thinking what I could make for dinner and I remembered Gordon's Trattoria. So here is my version of Gordon's gnocchi in Gorgonzola sauce. 

Ingredients:
- 1 pack of fresh gnocchi

- 2 cups of spinach

- 3 precooked sausages, sliced

- 1/2 whole milk

- 2 tablespoons butter

- 1 tablespoon flour

- 1 tablespoon olive oil

- 1 cup Gorgonzola or Roquefort, crumbled

Instructions:

In a large pot, bring water to a boil. Add salt. Drop gnocchi into the boiling water and cook following instructions on packet. Drain and set aside. 

In a deep pan heat olive oil. . Take out the slices and set aside. Add the butter. When melted, add the flour and whisk to create a roux. Whisk in milk and start incorporating cheese. Once the cheese is melted, add spinach and mix. If sauce is too thick, add some more milk until the consistency wanted is reached. Add cooked sausage and gnocchi. Serve!

*Note: In the photos, I cooked the sausage and spinach together, but I later realized that the above method is probably more convenient.
