Recipes: Chicken with Chipotle Sauce
This is one of my favorite go to recipes because its simple, delicious, and you can adjust spiciness and number of portions. My Tía Tere taught me this recipe, and although I don't think its a traditional Mexican dish, its a meal I've always associated with Mexico.
Ingredients for 4 portions
Note: I usually prefer chicken legs or thighs, but you can use chicken breast as well; either whole or diced!
- 4 chicken thighs, and depending on how hungry your group is maybe 4 legs!
- 2 potatoes, sliced
- 1 white or yellow onion, sliced
- 2 cups double cream
- chipotle chiles in adobo, to taste
- olive oil
- salt and pepper to taste
Instructions
Heat oil in a large sauce pan. Place chicken in the hot pan, skin down, and cook so that the skin get nice, crispy, and gold. Add onion and potato. While these are cooking, place cream and chipote in a blender and season with salt. Blend! (If you don't have a blender you can do this by hand). Pour sauce over chicken and turn heat to low. Cook until the chicken is cooked through!
You can serve this on its own, with rice, or whatever side you like!
