Recipes: Lime Pie
This is my super fast and easy go to dessert recipe!
Ingredients
- 1 pack of 'Maria' cookies or digestives
- 6-9 limes, juiced
- 1 can evaporated milk
- 1 can condensed milk
Instructions
In a bowl, whisk together evaporated and condensed milk. Slowly add the lime juice as you whisk. At first it might look watery, but as you add the lime juice it will thicken. If you have a blender you can just blend all the ingredients at once. In a baking pan, place the digestives in a single layer. Cover with the lime juice mixture. Add another layer of digestives, and so on, finishing with a layer of lime juice mixture. Refrigerate for at least 2 hours, but for best results refrigerate over night.
Note: You can serve the pie on its own, or you can whip some heavy cream into whipped cream before serving and cover the top layer!
