Enchilando Españoles en Edimburgo
As you all now, I love cooking especially if its for other people. Something about sharing your culture through cuisine and gathering around a meal has always something that I cherish greatly. So when Pablo asked me if I would cook a typical Mexican meal for his family I was more than happy to oblige. When events like this come up its always a struggle to come up with a dish that can feed many people and still exemplify the cultures and traditions that you're presenting. After a few days of consideration I decided that enchiladas verdes were the way to go. You can make as many as you like, the possibilities for the filling are almost endless, and you can tweak the spiciness of the sauce depending on the group you're cooking for. And of course enchiladas have to be accompanied by rice and beans. Super easy! As usual I turned to Lupe Pinto's for most of the ingredients. I'm usually quite confident about my cooking, but Pablo had been riling up his family for a while so I was a bit nervous to live up to there expectations. But then again I figure most of them hadn't had true Mexican food so there wasn't much for them to compare it too... feuf!!! Although I was in charge of the cooking everyone was more than happy to lend a hand and the final product was amazing! There were barely any leftovers and everyone was more than satisfied...or at least what they told me hehe. Here are a few pics of the food and the evening. In the end its not just the food, but the whole experience of gathering together, chatting, and having a good time while eating a delicious meal!
