I would consider this a side dish or an appetizer. I was hungry one morning and had random ingredients so I came up with this. Again, the measurements are not exact at all, but in this case its not really important. You can also prepare it with as many eggplants as you like depending on the quantity you want to make. I also wasn't expecting to post about this, so I didn't take many photos...oops!
Ingredients
- 1 eggplant
- salt
- pepper
- olive oil
- double cream
- halloumi cheese
Instructions
Preheat oven to 180C. Slice eggplant lengthwise. Make sure the slices aren't too think, but also not too thick. Place on a baking sheet and sprinkle salt on the eggplant. Let the eggplants sweat for about 10 minutes. Meanwhile slice the halloumi. Pat dry the eggplant. Season with pepper and sprinkle olive oil. Bake for 5 minutes to soften the eggplant. Heat a saucepan over medium heat. Add some olive oil. Without burning yourself, place a slice of halloumi on a slice of eggplant and roll it up. Place rolls in the pan and cover with double cream. Season with salt and pepper. Bring sauce to simmer. Serve!
